Never mind that I have only cooked on holidays during the last twenty years.  Never mind the fact that I do not have a dishwasher.  I am cooking and have found a dish that will be a staple.   Excuse the storage container.  I could have made it much more appealing in a regular dish but then I would have had to wash one more dish, by hand.  Forget that!

This is Butternut Squash & Black Bean Chili.  Anything I tried to do with these winter squashes has been sweet, when I was going for regular meal food.  But, in this recipe, the Butternut Squash took on the chili flavor, like tofu does.  I took one bite and felt so satisfied. 

I found the recipe by googling for winter squash and, sorry to say, did not keep the link.  I did not have all the ingrediants they wanted, so I will post the altered recipe here.  I am also cutting every recipe in half now so that I am not throwing out as much food when I don’t like it. 

So, here is my version of Butternut Squash and Black Bean Chili for VEGAN NO OIL

1 medium onion diced and sauted with
1 clove garlic
1/2 cubed butternut squash
When browned and soft, add:
1 can black beans, drained and rinsed
1/2 can tomato sauce
1 T chili powder
Vegetable broth to thickness you want
pepper to taste
Simmer 15 minutes.

You can even serve this in a mini pumpkin.  That would have made a great picture.
What I did not have was cumin or smoked paprika. 
They used 2 cups vegetable broth, but I like thick chili and used maybe 3/4 cup.

I am happy too that eating this way has resolved a gnawing feeling that I often have, at night, in my stomach.  Day one and two were agonizing and by day three, it seemed relatively easy.  Anyone have a dishwasher for sale, cheap?

Here, also, is my “Simple No-Tahini Hummus.”  It’s not as spreadable as it should be, but grandson said it tasted good.  I just have to figure out what to do with it.

I do not remember watching Julia Child.  I think I presumed I would not like her, and that she was rather ‘stuck-up.’   Never presume!

Julie Julia

The Julia Child, played by Meryl Streep, that I saw on the screen is the most delightful woman who finds joy in everything.  For this Julia, eating fish is an orgasmic experience.  No, make that, everyday living is an orgasmic experience.  She is delightful, radiant and someone anyone should love to be around.

Stanley Tucci is fantastic as Paul Child, Julia’s husband and we should all find the love that is depicted in this film, in our lives.

Amy Adams is Julie Powell, the blogger who decides she needs direction and discipline in her life and that her committment to cooking all the recipes in Julia Child’s book will be just what she needs.

I had only seen one review on this movie on Reelz channel, but one of the two reviewers found Amy Adams, as Julie Powell, to be whiny and irritating.  Frankly, I think he needs to get a life.  There are just times in life when the best thing you can do is fall on the floor and cry.  It is certainly better than breaking or shooting something.  The movie depicted the growth of this character and, at the end, she seemed as delightful as Meryl Streep portrayed Julia to be. 

The most wonderful thing about this movie, however, is you could not help but leave the theater feeling a lot happier about the world.  We need more of that in life.  We need more people like Julia in our lives.

I always clean as I cook, which lately has been non-existent. It’s not that I mind cooking. I just made the worse deal of my life with my husband once and have paid for it for twenty-five years; he cooks, I clean.  Since I always cleaned as I cooked (soapy water in the sink, wash while you are waiting for something to boil, wash and reuse measuring stuff) I had no idea how much damage he could do just cooking a frozen pizza.

 

There have been times I have gone into the kitchen and thought he must have cooked for an army and had a bomb go off while he was doing so. This is akin to him doing the dishes and using the sprayer to rinse. Half the kitchen gets a bath. So, while he cooks, flour is everywhere and door knobs and anything he touches have gook on them.  

 

This would not be so bad if he even knew what a vegetable was or how to cook anything that is not fried. In fairness, he is trying to cook healthier food. He grills a lot, including pizza (Pizza is fantastic cooked on the grill by the way, but put foil on the shelf under it so the bottom doesn’t burn).

 

We also eat ground turkey instead of hamburger a lot now too. Don’t tell the boys they are eating turkey tacos, please. But, my husband has still failed to come face to face with a green vegetable, and fried potatoes are one of his major food groups. He bakes one for me.

 

Since he has COPD and about twenty other problems, he is becoming more and more tired as he ages (and the disease is aging him fast). When we go out with mom, they automatically sit him next to mom and give them both the senior discount.

 

He does not have the energy to stay in the kitchen, or near the grill and watch progress. This results in us eating a lot of either 1. Burnt food or 2. Raw food.  And, since his main cooking is of meat, I am amazed we haven’t gotten food poisoning. Perhaps the burnt pizza crust is actually an antidote for food poisoning. The government should study that.
